5 Easy Ways to Add More Veggies to your Diet

Want some easy ways to add more veggies to your diet? Here are top 5 tips. Try just one each day and you'll be on your way to a healthier you.

It doesn’t matter what eating philosophy you subscribe to, it’s undeniably clear that everyone can benefit from adding more veggies to their diet. I know I’m not alone when I make resolutions and food related goals to eat more veggies. But without a plan these goals and ideals get pushed into the too hard basket. Do you want some easy ways to add more veggies to your diet? Here are my top 5 tips. I kept it to just 5 because 15 or even 10 can become too daunting, so even if these 5 ways are too much for you, then try 1, just 1 and make it happen.

1 Add a vegetable to a smoothie

Vegetables like spinach, kale, avocado, zucchini and even carrot can be added to smoothies. Spinach and kale are best added first. Remove the leaves from the stalks add some water and blend on high until combined and then add the other ingredients. Avocado and zucchini are soft enough to be added with all the other ingredients and carrots should be shredded first, then added to the smoothie before blending. With all vegetables start with a small amount and gradually increase the amount as you become use to the flavour.

2 Add a grated carrot or zucchini to your evening meal

Having the vegetable grated takes away the big flavour burst but adds some texture and bulk to your meal. Grated zucchini or carrot can be added to just about any meal. Some ideas to get you started are: to a pasta meal, to tacos/burritos/fajitas, you could add grated vegetables to my Walnut Tacos, stir-frys, shepherd’s pie etc

3 Order your meal with veggies

Ok, I know you really want chips, but why not order chips for the table to share and the veggies for you – even if it’s a small serving. If you’re eating out, chances are the chefs can cook better than you can, so it’s a great opportunity to see how good vegetables can really taste.

4 Having a sandwich for lunch? Add a vegetable

Unless it’s a sweet jam sandwich, any sandwich could do with an extra layer of vegetable. You can use grilled eggplant or roasted capsicum or sautéed mushroom. However, if you’re looking for something quick and easy try avocado, tomato or cucumber.

5 Slice it into ‘soldiers’

Small servings are easier to eat. Remember when you were a kid and everything tasted better when it was cut into ‘soldiers’? Just because you’re now an adult, doesn’t mean you can’t cut your veggies into smaller portions. Bugs Bunny might like a full carrot, but to start with cut that carrot up! And if that is still bit of a stretch for your taste buds, add some dip, preferably a vegetable one. You could try savoury cashew cream.
