It’s the time of year when I start thinking about all the different ways to make salad. It’s getting hot outside and I just want salad, but I want it to fill me up and be satisfying. And that’s where avocado comes in. Avocado is one of my most favourite things to have in a salad. We are fortunate in Australia to have avocados all year round because of the different climatic regions. And so today’s salad is brought to you by Australian avocados. I took one of my favourite salads – potato salad – and made it with one of my favourite vegetables – the avocado.
Actually, first things first. Avocados aren’t actually vegetables. Avocado is a fruit! In fact, it’s a berry. And now I love them even more. No more smashed avo on toast, it’s now smashed berry on toast.
This recipe definitely fits my criteria of being easy to make. Chop and steam the sweet potato, I didn’t even peel it, just washed them.
Blend the avocado, lemon juice, mustard and water. Then mix everything together. This is just as good cold as it is hot, so perfect for picnics and BBQs.
